
Queso Fundido
A fun appetizer or party table dish that's easy to make and big on flavor.
Ingredients:
1 lb. fresh chorizo sausage or ground beef/turkey
1 cup diced tomatoes, fresh or canned (drain tomatoes if using canned)
4 tablespoons Fat Cat Surprisingly Mild Guajillo Ghost Tex-Mex Hot Sauce and Marinade
1 tablespoon vegetable oil
1 white onion, diced
2 cups Monterrey Jack cheese
1/2 cup light beer or chicken stock
Tortilla chips
Instructions:
Remove skins from chorizo sausages if using.
Heat a pan over medium heat and add oil. Add chorizo/beef/turkey and sautee and 2 tablespoons of Fat Cat Surprisingly Mild Guajillo Ghost Tex-Mex Hot Sauce and Marinade, crumbling meat as you cook it, until well browned.
Take about 1/3 of the meat mixture out and set aside on another plate.
Then add onion, tomatoes, remaining 2 tablespoons of Fat Cat Surprisingly Mild Guajillo Ghost Tex-Mex Hot Sauce and Marinade and beer/stock to pan and bring the mixture to a boil.
Simmer for 3 minutes and then turn off heat and stir in cheese, 1/4 cup at a time, until well incorporated and smoothly melted. If the mixture is too thick for your liking, stir in more beer/broth little by little until you achieve your desired consistency.
Transfer to serving bowl. Sprinkle the chorizo/beef/turkey you set aside earlier on top and serve with tortilla chips.
