
Immunity Soup

Inspired by the Himalayan dish Thukpa (a flavor-packed curry-noodle soup that was created to warm the souls of residents in high altitude, low temperature climates), our Immunity Soup is a fusion of tradition and fire—featuring invigorating spices, hearty vegetables, a punch of fresh ginger, and just the right tinge of heat (courtesy of our own Siamese Sriracha Chili Garlic Sauce) to awaken your senses. Immunity Soup Recipe

Ingredients
- 2 tablespoons extra virgin olive oil
- 1 onion, chopped
- 3-4 large carrots, peeled and chopped
- 3 stalks celery, chopped
- 2-3 roma tomatoes, chopped
- 6 cloves garlic, chopped (yields about 3 tablespoons)
- 2 inches of fresh ginger, peeled and chopped (yields about 3 tablespoons)
- 1 cup lentils, dried
- 2 medium sized yukon gold potatoes, chopped (can use sweet potatoes instead if desired)
- 2 cups frozen spinach or kale (can use fresh in same quantities if preferred)
- 1/4 cup chopped parsley or cilantro (or a blend of the two)
- 6 cups vegetable stock (can use chicken stock if you don't want it to be vegan)
- 2-4 tablespoons Fat Cat "Siamese" Sriracha Chili Garlic Sauce
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- juice of one lemon
- salt and pepper to taste
Instructions
- Heat a stock pot over medium heat and add the olive oil
- Add the onion, carrots and celery and soften them, about 5 min
- Add the ginger and garlic and saute for 2 min or until fragrant
- Add the dry spices and toast for 1 minute, stirring and coating the vegetables as you do
- Add tomatoes, lentils and potatoes, and half of the Fat Cat "Siamese" Sriracha Chili Garlic Sauce and stir to combine
- Add the broth, stir to combine and bring to simmer. Cook for 15-20 minutes, or until lentils have plumped and cooked through and potatoes have softened
- Add spinach and cook for another 5 minutes.
- Taste for salt, pepper and chili heat -- adjust as needed, adding more "Siamese" Sriracha if desired
- Turn off heat and stir in lemon juice and parsley/cilantro. Serve and enjoy
Notes
Feel free to use other vegetables as needed, both frozen or fresh, including what's on hand.Frozen peas, corn or green beans, or frozen mixed veggies (including broccoli or cauliflower) are also delicious -- just add these items at the same time you add the spinach or kale in the recipe.
