Queso Fundido Cheese Dip

Queso Fundido Cheese Dip Recipe

Ingredients

  • 1 lb. fresh chorizo sausage (Mexican version, not Spanish version)
  • 1 cup diced tomatoes, canned or fresh (drain if using canned)
  • 2 tablespoons Fat Cat Surprisingly Mild Guajillo Ghost
  • 1 tablespoon vegetable oil
  • 1 white onion, diced
  • 2 cups Monterrey Jack cheese or Mexican Chihuahua melting cheese
  • 1/2 cup light beer or chicken stock
  • Tortilla chips, pita chips or toasted corn tortillas

Instructions

  • Remove skins from chorizo sausage.
  • Heat oil in pan and sautee chorizo, crumbling meat as you cook it, until well browned.
  • Add onion, tomatoes, Fat Cat Surprisingly Mild Guajillo Ghost sauce and beer/stock and bring to boil and cook for 10 minutes or until slightly reduced and onions have softened.
  • Turn off heat and sprinkle and stir in cheese, 1/4 cup at a time, until well incorporated and smoothly melted.
  • Transfer to bowl and serve with tortilla chips or tortillas.
